"Take on me" x "Take me on"
What's the difference in their meanings? Is there any? And what exactly do they mean?

Sounds like somebody's been listening to A-Ha.
The answer is, to the best of my knowledge, no. "To take somebody on" means a few things, but in the context of that song, I believe it is supposed to mean "to engage sombebody" (that is, to physically engage them, NOT to get ready to marry them). It can also mean "to support somebody". The phrase "take on me" is nonse verse that was written to sound cool; it's really just a grammatically incorrect version of "take me on". They're repeating themselves in order to have catchier lyrics.
