What is the difference between those 2 verbs?
Because of the prefix I initially thought, поговорить would be a perfective verb, yet they are both impefective. I know that the prefix по- sometimes translates to "a bit". So could you translate поговорить as "to talk a bit"? Are there any examples where I can use only one of these two?

Поговорить ist ein perfektiv Verb und hat auch die leiseste Betonung von "ein wenig", wie Sie schon gesagt haben. Welches Wort man auswählt, hängt davon ab, ob die Tätigkeit "beendet" oder "unbeendet" ist.
Es ist auch wichtig, dass perfektive Verben haben nur Formen der Futur und der Vergangenheit. Man kann niemals mit поговорить gegenwärtige Tätigkeiten beschreiben.

Yes, поговорить - is to talk a bit, to talk one, two times or other limited time. Поговорить is perfective verb, говорить is imperfective. Поговори со мной сегодня, я по тебе очень соскучилась. Мне нужно с тобой поговорить (just one talk). Tебе нужно говорить по-русски больше (more then one talk). Чем больше ты будешь говорить на русском языке, тем лучше ты будешь говорить на нём. (the more you will speak Russian, the better you will speak it). Говори, говори, не останавливайся.
But here Сегодня на лекции мы будем говорить о проблемах загрязнения окружающей среды. and here Сегодня на лекции мы поговорим о ... you can use both, because 1) during the lesson the discussion about pollution of environment will last, so it can use imperfecive verb 2) and of cause this lesson will end finally, so you can use perfective verb as well.

For example:"Нам нужно поговорить" - that mean "we need to talk", something in future.
"Я не могу говорить сейчас" - "i cant speak now", something in present time.
