Hello everyone
I have a question:
If i say: I admit eating a lot. i translate it in italian in this way: AMMETTO DI MANGIARE TANTO.
If i said in Italian: AMMETTO DI AVER MANGIATO TANTO OGGI, I have to write: I admit of eating a lot?

No, you don't transfer the "di" this way. The natural way of writing the sentence would be,
"I admit having eaten a lot today."
or
"I admit I ate a lot today."

While I cannot translate your Italian, I can say that in English, we do not say "admit of" something. We say "admit to" something. For example, "I admit to eating a lot."
However, "I admit that I eat a lot" is probably more common. Also, "I admit eating a lot" is not a complete sentence in English.
