Bonjour : du matin (6h) au début de soirée (18h-19h)
Bonsoir : de 18/19h et pendant toute la nuit
Ce qu'il faut retenir c'est qu'en disant bonjour le soir ce n'est pas gênant, en revanche dire bonsoir en pleine journée est étrange ;)

Je suis d'accord avec Julien, mais tu peux dire "bonsoir" dès qu'il fait noir (en hiver, il peut commencer à faire noir vers 16h).
