Proverbs usually convey some sort of wisdom.  Sayings are just things that people say... They may be wise or may be completely silly and make no sense!

Sayings are just expressions that people say, some are quite true and valuable.

Proverbs is a book in the Old Testament in the Bible, so are very very old and Biblically based.
