To "check" means to verify if something is true, or to find out about something. It is very commonly used in English.
"I'll check that date and get back to you..." means I'll look at my diary and see if I am available.
It is also used to draw attention to something: "Check this out!" meaning "look at this"!
Similarly, it is used when talking about people "He was checking you out" meaning he was looking at you and might be interested in you.
The phrase "last time I checked" is used in two ways.
1) If someone asked you about something which you observed, but it could be different now. Example: A: Is there money in the account? B: Last time I checked (meaning, yes, the last time I looked, there was money in the account).
2) It is also an expression that is sometimes used sarcastically to answer an obvious question. A: Do you have any children? B: Last time I checked! (said with a a bit of sarcasm, meaning, yes, and this is unlikely to change!)

P.S. Sorry, I didn't see the quote using the phrase (last time I checked, you need a man..); it is clearly the "sarcastic" use of the expression. Good luck.

"Last time I checked" is being used sarcastically in the sentence you referenced. It's like saying, "it has been a while since I looked (checked, investigated, researched) to make sure it is true, but I believe you are still single and not dating anyone," when the reality is that the person's singleness is clear to everyone, especially you, and so clear that there is no need to ask or "check."
