Snatch, grab, and seize all mean to take something away from something or someone, but are used in different scenarios.
Snatch would be used if you were holding something and someone took it away from you forcefully without asking.
Grab means to casually take something. This would be used if you went to go pick up an item. Pick up and grab can be used interchangeably.
Seize is a generally formal term, and would be used if the government or a corporation is involved.
For example
"As I was looking at the beautiful necklace, Timothy decided to snatch it out of my hands, and it broke in half."
"I went to grab my jacket and keys before I left the house."
"When the ancient Indian tribe were in a state of shock from the horses and guns, Pizarro took this opportunity to seize the town and take power."
