noodles
I thought this word is used in the plural form. But, is it used in the singular form to mean a particular type of dish?
It looks like noodles that are in the white bowl on the table.
This is the premium Soba noodle that is popular in the area.

"noodles" is not quite always plural.
"A single noodle was artfully wrapped around his fork"
"In the movie 'Lady and the Tramp,' there is a famous scene where the two stars are sharing spaghetti, and both begin eating the same noodle, ending with a kiss."
When discussing types, you can use either the singular or plural. The singular sounds more formal, and hints that the food is expensive.
"Walmart has an in-house brand of cheap noodles."
"This boutique sells a handmade buckwheat noodle that costs $15 a pound."
The same is true for uncountable nouns: you can add "a" to talk about types, but usually only in formal situations.
"The store sold cheap white rice and cheap brown rice."
"The store sold a short-grain rice that had been cultivated by a single Italian family for 5 generations."
