'trip me up' can either be to confuse, or temporarily stop someone doing something , or it can also be literal, where someone or something makes me fall by catching my feet.
I have never heard of 'trip me down'.
'trip me out' usually means to put me in a state of hallucination, such as with drugs, or a surreal experience. It can also be to catch someone in a lie or deception.
The first is quite common, the second is either very uncommon, or a local expression in some dialects.
The third is less common.

These are very colloquial expressions;
Trip me up - to confuse someone
Trip me down - to push someone to the floor or ground
Trip me out - to surprise someone / to shock or scare someone

1 Trip me up= to catch you out or to fool you or to trap you into doing or saying something.
2 I think you mean "to trip up" = to fall over. But is also used as an expression to mean the same as "trip me up" "trip someone up"
3.Trip out = an expression to describe between high on drugs.
