If we translate the verb (ever been skiing) exactly, it wouldn't sound very good in Spanish. You should keep in mind that Spanish is a very flexible language in terms of sentence structure, so we can also say: "Esquiaste antes alguna vez?"
2 - "Ésta es la serie sobre la que estuve hablándote, fíjate!" / "Ésta es la serie sobre la que te hablé, mírala!"
3 - The third sentence is very similar to the first one: "Has probado alguna vez comida coreana antes? Te gustaría probarla?" In this case you can omit the repetition of the word "probar" because it is implied, it has been used in the first part of the sentence. You can say: " Te gustaría hacerlo?" (to try it = probarla ) or just "te gustaría?"
