What is the difference between using「ことから」and「のだから」in this context?
国の大学で日本人留学生と知り合った( )、日本に興味を持った。

You can use から. 国の大学で日本人留学生と知り合った( から )、日本に興味を持った。
Maybe you're confusing から and のだから. のだから is not one word, の+だから. This の works to join a sentence and だから.

This is very difficult question.
I'll try to answer and I'd like to see others' opinions.
I think 「ことから」simply connects "reason" part and "result" part, and close to "so" or "and then".
On the other hand, 「のだから」more focuses on "reason" part and sentence following tends to be 「~するべきだ」「~したほうが良い」
So in English, it's like "Because .....you should....."
Example
‐(せっかく)日本人学生と知り合った(のだから)、日本のことを教えてもらうべきだよ
‐テストの点が悪かった(のだから)、もっと勉強するべきだ
‐歯みがきをした(のだから)、アイスを食べたらだめだよ。

国の大学で日本人留学生と知り合った( ことから )、日本に興味を持った。 is the right answer.
We do't say "のだから" in this sentence.
国の大学で日本人留学生と知り合ったことから、日本に興味を持った。 means
I was interested in Japan, because I met a Japanese student in a national university.
"ことから" means "because" or represents "the reason".
It can also be translated to
I had an opportunity to get to know a Japanese student, so I got interested in Japan.
I think that the latter is closer to the original Japanese phrase.
I don't use "のだから" so much, but if I use, I can use it in a negative situation like "あなたはもう大人なのだから、自立しなさい". It means "Because you are already an adult, you should be more independent " .
