A sadya is not a large meal. It is a structure, served and eaten in a fixed order. Sit down in front of the leaf and learn what is about to happen: which way the leaf points, what goes in the top-left corner, the pickles, the yoghurt dishes and the vegetable dishes, the crisp things, and then the rice at the centre, eaten in four rounds: dal with ghee and crushed papadam, then sambar, then rasam, then buttermilk. Then the payasam, and the etiquette that marks out someone who knows what they are doing, including how to stop the servers.
