How to cook crucian carp soup
The main ingredients:
one big or two small crucian carps
tofu
black fungus
fresh mushroom.
Condiments:
vegetable oil
salt
ajinomoto (MSG)
cooking wine
ginger
garlic
green onion
Steps:
1. Prepare the fish by scaling and removing its gill and viscera.
2. Under medium heat, pour right amount of oil into pan, put the fish, let it fry until surface turns golden yellow. Flip the fish to fry the other surface.
3. Pour some cooking wine, add a pinch of salt, ginger, and garlic.
4. Next, add tofu sliced into cubes, black fungus and mushroom. Let it boil for about 10 minutes.
5. When the soup turns white, sprinkle some Ajinomoto and green onion. Mix it up.
6. Ladle soup into bowls ready for serving.

Tips:
When using dried black fungus, soak it with hot water for about 3-5 minutes to expand, then rinse with cold water. Clean the black fungus, paying much attention to the roots, then soak it again. (Using cold water is ok as well, but hot water can save much time.)
