Can I use these interchangeably?
Such as a house, a car, and valuable things.
If I say;
You owe everything you have to me.
Everything you've got, you owe to me.
Or what would you say?

The best way would be "You owe me everything you have."
The explanation: Rarely would be say "You owe everything to me" in English. Any words like "me," "us," or "them" would go right after the verb.
"Everything you've got, you owe me" - Although this sentence is understood, you have to keep in mind that English is organized by importance. "You" is more important than what is owed.
