"I am fasting tomorrow" is the correct one.

Are you trying to say that you will not be eating tomorrow? If so, you could say any of these: I'm fasting tomorrow. I will be fasting tomorrow. I need to fast tomorrow. I have to fast tomorrow. The later two sentences imply that it's an obligation.

I am having fast tomorrow.
