whats the correct form to write address in Chinese- for example-
China HongKong Kowloon九龙 Tsim Sha Tsui 尖沙咀 100 "Name" street building name, 5th floor, room 10

both correct, but 100楼 is wrong, according to your sentence, you should write as 100栋 or 100幢 instead.

so for example if i'll write -
香港九龙尖沙咀加連威老道100楼港品中心6层602室 - it will be correct
or should I write like this- 香港九龙市尖沙咀镇加連威老道100楼港品中心6层602室

It is correct.
Usually 510 means 5th floor, room 10. Because no more than 99 rooms each floor
