Which ones are grammatically correct? I don't know how many times I've seen this movie. or I saw this movie I don't know how many times I've told you that. or I told you that I don't know how many times I've done this. or I did this.

They can both be correct, depending on the circumstances and context.

In each case, the first one. The present perfect is used when you've done things in the past and it's uncertain whether you may do them again. You may see the movie again, or tell me that again. The simple past could only be used in this case if the time is closed and it's impossible to do the same again. "I don't know how many times I told you that when you were a child. (you are an adult now).

I think the original poster needs to say in what circumstance he is using the sentences. It is misleading to say they are fine, as they are not fine in all circumstances, as I said in my post above. It is NOT correct to use simple past if you are talking about open time. I know it's common in American English, but it's NOT correct.
