What's "take her out at the knees" mean?
In Desperate Housewife S102, Susan told that Edie would be in her dinner date with Mike, that's not what she was planning to. And said "I was gonna take her out at the knees, but it all happened so fast." What is "take her out" and "at the knees" mean here?

It's not used as commonly as it sounds, but it basically means "to hurt" or "to incapacitate."
When you shoot someone in the kneecaps, they cannot walk again. When you tackle someone at the legs, they topple over. So it seems to me that the writers for Desperate Housewives wanted to express one of the above phrases, but didn't want to encourage violence towards women on television.
