Why "coffees" are in plural if its an uncountable noun? We had coffees together. We went sightseeing. I even helped Rob buy a shirt!

Coffee itself is uncountable, but a cup of coffee can also be described colloquially as a 'coffee', which can be pluralized. For example: "today I've already had three coffees" or "we would like two coffees please". So cups of coffee = coffees. In your question, it should read "we had coffee together", or "we had some coffees together“ (suggesting each person had more than one). Hope that helps.
