"Il ne s’est pas passé de passionnant." vs. "Il ne s’est rien passé de passionnant." How would you say "Nothing interesting happened.? Perhaps: "Il ne s’est pas passé de passionnant." Or would it be: "Il ne s’est rien passé de passionnant."

Idem, the first is incorrect, the second is ok. I would add you can say also: "Il ne s'est rien passé d'intéressant" (>interesting)
