About the phrases "Okay, you win" and "You have won me",
In what situations would you use them?

I believe you mean the saying You have won me over. meaning at first I did not like you but now I do.
you would never say you have won me, you win would be used if the other person wins a game or something

"you have won me" would only be used if you were the prize that was won. Did you mean "you have beaten me?"
