"Questo e' il miglior ristorante della citta'."
Could anyone tell me why it's miglior" instead of "migliore" in the above sentence?

1) If you ALWAYS use migliore, you will never make an error.
2) The change in form is called /troncamento/, (and in this case is not mandatory).
Usually you have /troncamento/ of 'migliore' before a noun.
Examples, using also other adjectives.
a1) Giovanna fra le mie amiche e` la migliore.
a2) Giovanna e` la mia miglior amica.
b1) Questo e` il maggior albero del mio frutteto. (biggest) (frutteto = orchard)
b2) In tutto il frutteto questo vecchio albero e` il maggiore.
c1) Senza dubbio il miglior musicista dei Pink Floyd e` quel gran genio di Roger Waters.
c2) Senza dubbio, fra i musicisti dei Pink Floyd il migliore e` Roger Waters, un grande genio di creativita`.
The forms (x1) are more fluent, should be preferred.

Good news and bad news:
good: Migliore, peggiore, maggiore, minore all follow the same set of rules for 'troncamento'.
bad: The transformation of 'grande' in 'gran', 'bello' in 'bel', 'quello' in 'quel' follows different set of rules which might be explained in each case (anyway I am not an expert in this subject).
