"Sting" is a slang term for a kind of situation where one person (or a group of people) tricks another person (or group of people) in to harming themselves usually through some kind of very complicated deception. An example of a "police sting" might be where police officers pretend to be criminals so that the real criminals talk and reveal all of their plans to the police officers, and get caught while committing a crime. Often times, stings are financial, and someone is tricked into giving away their money. "The sting had come off perfectly" means that all of the plan to trick someone had gone exactly as expected.
