Mickey is
appealing because he is nice. He may get into trouble, but he takes it
on the chin with a grin. He is both good-natured and resourceful.
Perhaps that was Disney’s own image of himself.

It's a cute saying that means to handle a bad situation with grace.
"take it on the chin" physically means to be punched on the chin (and usually knocked down) and figuratively means to have something bad or terrible happen (fail a course, lose a job, become very sick, have a death in the family).
"with a grin" figuratively means to remain graceful.

It's a euphemism and way to rhyme "chin" and "grin".
It means he takes a punch/slap/etc. from the trouble to his/the chin, but he still grins/smiles despite it.
