He tries to free himself with his magic but accidentally brings the tree to life, which completely falls in love with him. Tree: I love you. Schmendrick: Oh, what have I done? Tree: Always, always. Faithfulness beyond any man's deserving. I will keep the color in your eyes when no other in the world remembers your name. There is no immortality but a tree's love. Schmendrick: Oh, no, I'm engaged to a Douglas fir. Could you explain to me the meaning of "I will keep the color in your eyes", please? Thank you.

The tree is saying that its love is so faithful and enduring that it will remember even a small detail about Schmendrick — namely, the color of his eyes — long after everyone else in the world has forgotten that he even existed.

No idea, to be honest. I have never ever heard this expression before. it might be an original saying, like the first use ever of this expression, by the author of the book.
