"noodle" is countable in all senses of the word. The plural form "noodles" is actually, by nature, more common than its singular counterpart..

Noodle is countable: "I have one noodle, you have two noodles, there are 147 noodles cooking in the pot." "Are the noodles ready?" "I tasted one of the noodles, and it wasn't tender yet. The noodles still need to cook for a little longer."
