Would you ever say this? Would you say "What even are you?" if you are frustrated and don't know what this creature is. Example: You're not a human. You're not a ghost. You're not a vampire. You're not a zombie. What even are you? Would you ever put even like that?

Yes, it's perfect. It's quite natural to use 'even' the way you have.

"What even are you?" is natural and often-used English wording. Or I might just say "What are you?" (Although - when addressing listeners known to be human, it is extremely impolite to ask, "What are you?" in reference to race, ethnicity or national origin. Ex: "You're not white, you're not black, you're not Jewish, you're not Chinese. What are you?" <= please do not ask human beings this question.) Depending on just how unnerved I was by the non-human, non-ghost, non-vampire, non-zombie that I was speaking to, I might ask something like "What the heck are you?" - although "heck" might not be the word I would use. ;)
