For some reason, even though we expect to have one dream, we just say "dreams." There's no grammatical reason for that, that's just what the saying is.

"Sweet dream!" ...just one?? How stingy!!

I agree with ランゲージマン . Sweet dreams is perfectly correct. Why do you want to change it?
