The structure is why + verb + n't + subject + rest of sentence.

If you want to use the full form of the verb:
Why + verb + subject + not + rest of sentence.
So why does Erik not go to work?
You CAN say "Why Erik does not go to work", but then it is no longer a question.
Why Erik does not go to work is a mystery.
Why Erik does not go to work: list of reasons why. In this case, you put a colon, not a question mark.

The second one is correct. You could also say "Why doesn't Erik go to work?" and be correct.

Contracted negative verbs (can't, won't, doesn't, don't etc) are placed in the place the verb would be in the sentence not "not"
