Once I came across a little fox on the mountain. He seemed to me shy and cautious but curious and intelligent as well. We were staring at each other for a while and after a minute he left, looking back at me from time to time. This lasted for a long time and finally he vanished into the forest.
I don’t really now if that fox was male or female, but no doubt was stunning.
Remembering that brief encounter If I could choose any animal to be I would pick a subtle and cunning little fox.

Your writing is very good. Usually I am deleting unnecessary words, but here, for a change, I am adding them! In the second sentence I keep "doubt" but I think prefer just saying "but it was stunning". or "it was stunning nonetheless". I hope that helps.
