In the sentence "I hope my email finds you well", the word 'well' is an adjective complement. This is because it is modifying the noun 'you' and not 'finds'.
To compare, here are some examples of sentences in which 'well' is an adverb (ie, when it is describing a verb)
"You did the exercise very well"
"You speak English very well"
In these cases, the word 'well' in the first sentence refers to the action 'did' and in the second sentence refers to the action 'speak' which makes them adverbs.
