Is " I haven't been speaking English like forever" a correct sentence?
Is there a better tense could be used to express this?

"I haven't spoken English in a very long time."
"It has been a while since I've spoken English."

The word "like" is entirely unnecessary. It is merely a "filler," which is a meaningless word or sound uttered when you're unsure what to say next. It's like saying "um" or "uh."
"I haven't been speaking English forever" is ok. However, "I haven't spoken English in forever" sounds a little better. You could also say a bit poetically, "I haven't spoken English in an eternity." Or you can say very plainly, "I haven't spoken English in a very long time." My own favorite is "I haven't spoken English in ages."
