For the tomato sauce: take an onion, a carrot and a stalk of celery. You chop up finely the vegetables.Finely chop an onion, a carrot and a stalk of celery.
Heat two tablespoons of olive oil in a saucepan and add the vegetables. Gently fry for three minutes (taking care not to burn the vegetables). Add tomato juice/puree (how much) and a teaspoon of salt. Cover the saucepan and simmer until cooked
In another saucepan bring water to the boil, add a teaspoon of salt and the pasta (80g per person) and cook until al dente.
Drain pasta, add the sauce and grated parmesan cheese and serve.
