"Non possiamo e non tollereremo che valori comuni vengano messi a repentaglio."
I know in English it is perfectly normal to say "we cannot and will not tolerate that...". But is it common to write like this in Italian - without the infinitive verb "tollerare" after "possiamo"?

Yes it is common! The "e non tollereremo" is coordinated to the principal sentence "Non possiamo" so you can say that! It is grammarly correct. In case you wrote "non possiamo tollerare" the meaning would be slightly different, it would be as the English "We cannot tolerate" which is different to "We cannot and will not tolerate that".
