Today is the first day of 2023. It was a great day. When I was tired, I would have a little nap. When I was energetic, I would study for my work. I also practiced handwriting on the blackboard for a while and I hope I can insist on doing it everyday. I don’t like eating meat at all but for my health I started to eat some beaf. My daughter and son also completed their study well without my pushing again and again. Enjoy every single day and enjoy our life.

I also practised handwriting on the blackboard for a while and I hope I can persist in doing this every day. I don’t like eating meat at all, but for my health I started to eat some beef. My daughter and son also completed their schoolwork well without my pushing them again and again. Enjoy every single day and enjoy our lives.

Very well done. We would not use 'I would do ...' structure to describe what you did today, but more habits in the past. Also, we would use the present perfect to describe the day as being 'great' because we are still in the same day. Once the day is past, we can say' It was a great day'. Finally, it is not entirely clear whether your last sentence is an imperative or a description.
