Joey is referring to the popular carol, "The Twelve Days of Christmas", which includes the lines "ten lords a-leaping" and "six geese a-laying". In this case, we assume the geese are laying eggs, but Chandler re-interprets the line as "laying (themselves) down", as if to relax.
