okumak is a verb in the infinitive form. It's "to read" in English.
it's true that the root of this verb is "oku". all verbs in the full infinitive end in 'mak or 'mek. if you look in a dictionary you will find verbs given in this form.
if you remove the k from the end of a full infinitive you get the short infinitive which functions as a noun.
the resulting "okuma" is a noun
okumayi - this is just the above "okuma" noun being used as the object of a verb.
when a verb is the direct object of a verb the suffix -i is added to the noun, as in the case of the above example the noun ends in a vowel, the -y is added as a buffer between the two vowels.

OKU- is root and it is a verb OKUmak, as you know. Then, there are two options to make it noun. You can either use -ma/-me OR -mak/-mek. In other words, okuma and okumak are noun versions.
Kitap okumak faydalıdır = Kitap okuma faydalıdır. (They are both grammatically correct however first version is more common)
So, what is the difference? If we are using the noun without any suffices, we prefer using -mak/-mek. If we are using suffices to noun, we prefer using -ma/-me.
Kitap okumayı severim = Kitap okumağı severim. (They are both grammatically correct however first version is a lot more common)
