I enjoyed spending my time with you-덕분에 즐거웠습니다 (literally means that I enjoyed my time owing to you/ I am happy because of your consideration.
I hope to see you soon- 곧 볼 수 있길 바래 (to your friends or so)/ 조만간 뵐 수 있기를 희망합니다(to your boss or grandfather or so)

Answers to your queries:
"I enjoyed spending time with you" - 내가 당신과 함께 시간을 보내는 즐겼다
"I hope to see you soon" - 내가 곧 당신을보고 희망
I hope these would help a lot. Thanks.
