What's the difference, please?

Interchange gives the meaning of exchange in the sense of "to give and receive mutually".

But interchange has more meanings than exchange.
1. To switch each of (two things) into the place of the other.
2. To cause to succeed each other in a series or pattern; alternate: "The designer interchanged gold and silver beads in the bracelet."
3. A highway intersection designed to permit traffic to move freely from one road to another without crossing another line of traffic.
4. an exchange of things, especially ideas, opinions, or information, among people;
5. a place where passengers can change from one train or bus to another or between trains and buses
6. to cause to follow one another alternately; "I wish to interchange business cares with pleasures."
