This isn't an exact science, but the test for an ungradable adjective is whether or not you can put very before it. This would be my view:
Gripping
Fast-paced
Electrifying X
Chilling ?
Horrific X
Creepy
Touching
Moving
Poignant
Predictable
Weak
Dull
Awesome X
Unforgettable X
Brilliant X
