which is more accurate, are we having a meeting today? or are we meeting today?
I just don't feel comfortable with the first one.

Are we having a meeting today? is used in formal situation, such as when you, your coworkers, and your boss get together to discuss ideas. Are we meeting up today? should be used in informal situations, such as when you will get together with friends.

Not in a sense as more accurate, but more direct is "Are we meeting today?", but both variants are correct.
