Je voudrais savoir comment on dit "the latter" "the former" en français.

There is also the "pronoms démonstratifs", for example.
I think what you need to know is this when you write a sentence:
Elle a parlé avec son frère et après avec sa mère. CELUI-LÀ habite en Allemagne, CELLE-CI habite en France.
Celui-là = the former (son frère)
Celle-ci = the latter (sa mère)
