what’ s meaning of "in matter"? We may define chemistry as the science in which we deal with the chemical change in matter as a result of which it is possible to form a new substance. I don't understand the "in matter" in the sentence, does it mean "a kind of thing"?

Matter is all the things around us.

Yes, it does. It means that chemistry is trying to understand how a substance (matter) can change from one type to another - "the chemical change in matter". Matter being, as Bree said, "a physical substance".
