Hi Sunshine. (great name!)
We remember or forget doing things in the past....things that we did. Eg 'I'll never forget meeting the queen' I still remember buying my first car'....+ing
We remember or forget to do things we have to do. Eg. 'Did you remember to buy bread?' 'You mustn't forget to collect the parcel from the post office'.....+to

Forget/remember + to + infinitive means that you remember something you have to do.
- Don't forget to post this letter for me?
- Remember to turn off the light when you leave the room.
Forget/remember + ing means remember something you did in the past.
- I'll never forget meeting you for the first time.
- I'll always remember meeting you for the first time.
My answer is a little simplified but I hope that you can understand.
