Firstly, the function of an apostrophe "s" is to show possession or ownership of something else.
Secondly, the position of the apostrophe (') depends on whether this object is owned by (i) a group of nouns OR (ii) a single noun. There are some exceptions as described in part *.
Example:
The dog's toys are over there. (A single dog owns the toys. To show this SINGLE ownership, we add an apostrophe before a letter "s" / dog + 's --> dog's)
The dogs' toys are over there. (A pack of dogs own the toys. To show this GROUP ownership, we use the noun in the plural form before we add an apostrophe / dogs + ' --> dogs')
Do take note that in your sentence, the words "Our three dogs' toys" shows that "three" is an adjective describing the quantity of the plural noun "dogs". It does not matter how many dogs there are. As long as there are two or more dogs, it is a plural noun, and (s') should be used to express this GROUP ownership.
* Just as a side discussion, there are some nouns which are considered plural, even though they do not end with a letter "s". In such cases, we merely add an apostrophe before a letter "s" ('s).
Example:
Three of the child's books are over there. ("child": singular noun / Add ('s))
Three of the children's books are over there. (children: plural noun / Add ('s))
It does not matter how many books are over there. The key is to consider if the OWNER is singular or plural)

It's dogs'. When you make plural nouns that end in s possessive, you only add a comma to the end of the word. So if it was singular, you would say the dog's toy, because the possessive noun is dog. Since there are three dogs you would say the dogs' toy.

When it is plural and you want to show possession you put an apostrophe after the s
Singular:
Our kid's school is right there
The dog's toys are right here
The teacher's lessons are on the table
Plural:
our kids' school is right there.
The dogs' toys are right here
The teachers' lessons are on the table
