Your answers are mostly correct.
Asking for an apple pie is asking for an entire apple pie (which would make sense for a take-out order at a bakery. Asking for some apple pie or a piece of apple pie is asking for a triangular portion of a pie (which would make sense at a restaurant).
So "an apple pie" should be "a piece of apple pie" or "some apple pie" or "apple pie."
Also, punctuation marks have no spaces before and one space after.
like ,sir => like, sir
sir ? => sir?
you , madam => you, madam

Finally, "the something" is often used in restaurants. It means "the something that is listed on the menu." "The chicken" is fine if there is only one chicken dish on the menu. Otherwise, a more precise term is needed such as "the baked chicken" or "the roasted chicken."
