Do people in India mix languages while they speak? I am asking because I sometimes mix Gujarati and Hindi.

Yes here in Karnataka also we some time mix kannada with HIndi some time kannada mix with english. Even in north part of karnataka most of the words are Hindi
English has so much influenaced on Indian languages that each languages of India is mixed the English

NO NOT MIXED BY YOUNG PEOPLE NOW BUT YES EARLY AND STILL WITH SOME OLD PEOPLE DO MIX TWO LANGUAGE BUT NOT YOUNG GENERATION AND I M TALKING ABOUT ONLY GUJARAT STATE BECZ OUR OLD AGE PEOPLE NOT KNOW WELL HINDI BECZ THEY STAY MOSTLY IN GUJARAT BUT SOME TIMES THEY HAVE TO USE HINDI AND THEY DONT KNOW SOME DIFFICULT WORD IN HINDI SO THAT TIME THEY MIX GUJARATI.. OK
