In the picture, the second question, with the circles marked, shows the correct answers given, but I always feel puzzled why these are chosen. It seems like the other answer could be right as well.

English does not have a proper future tense. As such, it can be difficult to know which present conjugation to use.
The Future Simple (will) is typically used to describe a future prediction or unsure future event (though there are other uses)
The Present Continuous (am/is/are + -ing) is typically used to describe a future planned event that one is more sure about.
The Present Simple is typically used to describe a scheduled future event.
In Question 2, as the writer is sure when they are leaving, but have not given a specified schedule, the Present Continuous (we are leaving) is the best answer.

It has to do with the use of the future and that is what you are learning in the book.
When do we use the will-future?
1. future actions happen without the speaker's intention (birthday, weather, etc.)
The sun will shine tomorrow.
Peter will be 15 next Tuesday.
2. predictions, assumptions (I think, I hope, I'm sure, I'm afraid)
I think Sue will arrive in Paris at 6 pm.
3. promises, threats
I promise I will learn the poem by heart.
4. spontaneous actions (not planned)
Hang on! I'll have a word with you.

If you had freedom to write what you like, then I'd correct the grammar as follows:
1: The circled answer is correct
2: Both options are valid.
3: The circled answer is correct.
4: Both options are valid.
5: The circled answer is correct.
6: Both options are valid.
7: The circled answer is correct.
8: Both options are valid.
9: Both options are valid.
BUT, this page is specifically instructing you to choose only the present continuous tense. It's a quiz, testing your ability to understand the difference between tenses. It's not a simple grammar test where you only need to write something potentially valid.

Both possibilities work for #2, but for the others only the circled word conveys the correct meaning in a natural way.
