Hi Anna! It's been ages. Hope you had a great Xmas and new Year. "Go easy on" in this context means don't have too much, or be careful of how much you drink. Regarding "you never know what could go down...", this means that if you DO drink too much, anything could happen afterwards as a result of your drunken state!!!

"Go easy" means "don't do something too much/quickly/roughly", so in this case it means "don't drink so much egg nog". "You never know what could go down" <- honestly, this sentence doesn't make a lot of sense... maybe there's something missing from context? You could say "what could come UP", since egg nog is a very...mmm... peculiar drink, and some people throw UP after they drink too much of it. :)

Egg nog is a very particular drink in America that is served around the holidays (between Thanksgiving and Christmas).
