What can "flipping shit" mean? Is that a positive way to describe things or negative way or both? Here is the example of using "flipping shit", I can't tell what it means. she hates everything right now. nothing is good. she shows no respect or consideration to my dad. she is constantly flipping shit at my grandmother and at how much everyone around her sucks and also at how bad she feels about being so judgemental.

In your sentence, it's definitely a negative meaning. Note the use of "at" to indicate a target. You can imagine the scene almost literally. I really can't think of a positive meaning for this one.

I've heard it used to mean "freaking out" if that makes more sense to you. In this case she is most likely yelling at/talking back to/being a little jerk to the grandmother. Although you probably know this, just in case others do not, "shit" is an English profanity, so don't use it in polite conversation.
